At Royal Solaris Cancún, mixology has reached new heights with the launch of the New Cocktail Menu, a celebration of Mexico’s most iconic spirits. This project was crafted by Cecilio Ríos, a distinguished mixologist who previously showcased his talent at GR Solaris.

The Inspiration Behind the Menu

According to Cecilio, the menu was born with a clear purpose:

“The inspiration comes from giving prominence to our main Mexican spirits, such as mezcal and tequila, using spices, aromatic herbs, and Mexican fruits.”

Each drink aims to highlight the best of these spirits, bringing out their full potential through local ingredients such as regional cinnamon, fresh fruits, and modern techniques like molecular mixology.

The Favorite Cocktail: Holly Days in Solaris

Among the eight cocktails, Holly Days in Solaris holds a special place in Cecilio’s heart. This cocktail, with its holiday essence, was created during the festive season:

“My menu was created during the holiday season, so I wanted to make a cocktail with a festive essence. This cocktail will remind us of Christmas all year long, and that’s why it’s my favorite.”
